This shrimp and fusilli pasta is a wonderful no fuss dish to serve to family and guests alike. Ingredients needed: 6 oz. of uncooked fusilli, Pam® nonstick cooking spray ( I can remember being little and thinking that Pam® nonstick cooking spray was named after my sister Pam ... ha ), 2 cloves of minced garlic, 1/4 tsp. of crushed red pepper,12 oz. of medium shrimp ( peeled and deveined ), 2 cups of snow peas, 8ozs. of sliced water chestnuts ( drained ), 1/3 cup of sliced green onions, 3 Tbs. of lime juice, 2 Tbs. of finely chopped fresh cilantro, 2 Tbs. of olive oil, 1 Tbs. of soy sauce, 1/2 tsp. of Mexican seasoning. Preparations are as follows: Cook pasta according to package directions. Drain; and set aside. Spray large skillet with nonstick cooking spray, heat over medium heat until hot. Add garlic and red pepper; stir fry for 1 minute. Add shrimp and stir fry for an additional 5 minutes, or until shrimp are done. Remove shrimp from skillet. Add snow peas and 2 Tbs. of water to skillet; cook, covered for 1 minute. Uncover; cook and stir for an additional 2 minutes or until snow peas are crisp tender. Remove snow peas from skillet. Combine pasta, shrimp, snow peas, water chestnuts, and green onions in a large bowl. Blend lime juice, cilantro, oil, soy sauce, and Mexican seasoning in a smaller bowl. Drizzle over pasta mixture, toss to coat and garnish as desired. Enjoy.
