One Pot Chicken Ranch Pasta

What's not to love about this cheesy baked pasta topped with crispy bacon? Did I mention that it is a one pot meal?! Less clean up. 
WINNER WINNER CHICKEN DINNER! 

Ingredients:

4 slices bacon, diced
2 cloves garlic, minced
2 cups chicken broth
1 cup milk, or more, as needed
1 1/2 cups diced or shredded chicken ( leftover or rotisserie works well. )
8 ounces rotini pasta
1 (1-ounce) package Ranch Seasoning and Salad Dressing Mix
salt and freshly ground black pepper, to taste
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley leaves

Directions:

Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Drain excess fat; reserving 1 tablespoon in the skillet. Transfer bacon to a paper towel-lined plate. Add garlic to the skillet and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, milk, chicken, pasta and Ranch Seasoning; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer, stirring occasionally, until pasta is cooked through, about 15-16 minutes. If the mixture is too thick, add more milk as needed until desired consistency is reached. Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes. Serve immediately, garnished with bacon and parsley.

Instant Pot Hard Boiled Eggs


I must say that these eggs were so easy to peel! It was as though the peelings slid right off! 

Eggs (as many as you like to fill the bottom of the pot rack)
1 cup water

Directions:

Pour the water into the pot, and place the eggs in a steamer basket if you have one. If not, just use the rack that came with your pot.Close the lid, set for 5 minutes at high pressure. It will take the cooker approximately 5 minutes to build to pressure and then 5 minutes to cook. Let the pressure naturally reduce for an additional 5 minutes after the cooking cycle completes. That's around 15 minutes, total. Place the hot eggs into cool water to halt the cooking process.
