Savory Sausage Stuffed Chicken Breast

This sausage stuffed chicken breast is absolutely delicious. Ingredients needed: 6 boneless skinless chicken breasts halves, 1 lb. of BOB EVAN'S FARMS® hot roll sausage, 1-8oz. block of Monterey Jack cheese, divided, 1 large green bell pepper, sliced into rings, 1 large onion sliced into rings, 2 cloves of minced garlic, 2-16 oz. cans of stewed tomatoes, undrained, 1-12 oz. can of large black olives, drained, sliced, and divided, 1/4 cup of chopped fresh cilantro, 3 Tbs. of chopped jalapeno peppers ( optional ), fresh cilantro sprigs ( also optional ). Preparations are as follows: Pound chicken into thin rectangles with a meat mallet or rolling pin. Divide uncooked sausage into 6 equal pieces. Cut 6 ( 1/2 inch thick ) sticks from cheese block. Shred remaining cheese and set aside. Wrap each sausage piece around each cheese stick to enclose cheese completely. Place 1 sausage bundle on each chicken piece at one narrow end; roll up and secure with toothpicks. Melt 2 Tbs. of butter or margarine in a large skillet over medium heat until hot. Add chicken bundles; cook, covered, approximately 5 to 7 minutes on each side, or until browned, turning occasionally. Remove chicken and set aside. Melt remaining 2 Tbs. of butter or margarine in same skillet, add bell pepper, onion, and garlic; cook and stir until onion is slightly browned. Stir in tomatoes with juice, half of the olives, chopped cilantro, and jalapenos, if desired. Cook and stir over medium-low heat and additional 10 minutes. Place chicken bundles back into the mix, cook, covered, for an additional 30 minutes. Spoon tomato sauce mixture over chicken, sprinkle with remaining cheese and olives, if desired. Garnish with fresh cilantro. Enjoy.
