Ravenous Ravioli With Tomatoes And Zucchini

This ravioli is a wonderful dish to serve up, especially during the gardening season when zucchini and tomatoes are plentiful. Ingredients needed: 2-9oz. packages of fresh or frozen cheese ravioli ( or tortellini works well also ), 3/4 lb. of hot Italian sausage crumbled, 14 1/2 oz. of fresh diced tomatoes or 1 14 1/2 oz. can of DEL MONTE® Diced tomatoes, 1 medium zucchini ( thinly sliced and quartered ), 1 tsp. of crushed basil, 1/2 cup of ricotta cheese or 2 Tbs. of parmesan cheese. Preparations are as follows: In an 8-quart sauce pan, cook pasta according to package directions; drain. Keep hot. Meanwhile in a 6-quart sauce pan, brown sausage over medium-high heat, until no longer pink; drain. Add tomatoes, zucchini and basil. Cook uncovered, over medium-high heat about 8 minutes or until zucchini is tender-crisp, stirring occasionally. Season with pepper if desired. Spoon sauce over hot pasta. Top with ricotta cheese. Enjoy.
