Mandarin Orange Pork Tenderloin

This pork tenderloin is a quick and easy mouth watering addition to any menu. Ingredients needed: 1 pork tenderloin, 1 Tbs. of vegetable oil, 1/2 cup of orange juice, 1/2 cup of orange marmalade, 2 Tbs. of lemon juice, 1 Tbs. of corn starch, 1 tsp. of prepared horseradish, 1/2 tsp. of ground cinnamon, 1-10 oz. can of mandarin orange segments, drained. Preparations are as follows: Slice tenderloin crosswise into 8 pieces. Flatten pieces slightly with a cooking mallet. Heat oil in a large skillet over medium-high heat. Brown pork pieces quickly, about 1 minute per side. Blend in remaining ingredients, except the mandarin oranges. Add ingredients into skillet. Cook and stir until sauce thickens. Reduce heat and simmer for an additional 3 to 5 minutes, or until pork is barely pink in the center. Remove to serving platter and garnish with mandarin orange slices. Enjoy.
