Old Fashioned Sweet Potato Pecan Pie

This old fashioned sweet potato pecan pie is sure to be a crowd-pleaser, and if you don't have a crowd, feel free to invite me. ( ha ) Pie Filling Ingredients needed: 1 9-inch pastry shell,  1 lb. of sweet potatoes, cooked and peeled, 1/4 cup of butter, 1 14-oz. can of sweetened condensed milk ( Eagle® brand being my choice ), 1 tsp. of grated orange rind, 1 tsp. of vanilla, 1 tsp. of cinnamon, 1/2 tsp. of nutmeg, 1/4 tsp. of salt, 2 eggs.  Pecan Topping Ingredients needed: 1 egg, 3 Tbs. of dark corn syrup, 3 Tbs. of brown sugar ( Domino® brand being my choice here ), 1 Tbs. of butter, melted, 1/2 tsp. of maple flavoring, 1 cup of chopped pecans Preparations as follows: Preheat oven to 350 degrees, In a large mixing bowl mix together hot sweet potatoes, and butter until smooth. Then add remaining ingredients, 1 14-oz. can of sweetened condensed milk ( Eagle® brand being my choice ), 1 tsp. of grated orange rind, 1 tsp. of vanilla, 1 tsp. of cinnamon, 1/2 tsp. of nutmeg, 1/4 tsp. of salt, 2 eggs. Mix well. Pour into pie shell and bake at 350 degrees for 30 minutes. Remove from oven, and spoon pecan topping mixture evenly over top while still hot. Return to oven and bake an additional 25 minutes until golden brown. Serve warm or chilled. Enjoy.
