This recipe for no fail, no bake, chocolate cookies, has been passed around through generations of my family for years. It's a quick and simple recipe that's sure to satisfy that sweet tooth. Ingredients needed: 2 cups of sugar, 1 stick of unsalted butter or margarine, 1/2 cup of evaporated or whole milk, 4 Tbs. of unsweetened cocoa powder ( Hershey's® brand Cocoa being my favorite ), 1/8 tsp. of salt, 1/2 cup of peanut butter, 1 tsp. of vanilla, 3 cups of uncooked quick oats ( Quaker® brand being my choice here ). Preparations as follows: In a large saucepan over medium heat, combine the sugar, butter, evaporated milk, cocoa, and salt. Heat, stirring frequently until boiling. Continue to boil while stirring continuously for 1 to 1 1/2 minutes. Remove from heat and stir in the peanut butter and vanilla until smooth. Add quick oats and mix well. Let stand for 1 to 2 minutes to allow oats to absorb. Drop by rounded tablespoonfuls onto waxed paper, or foil and allow to cool completely. Store at room temperature in an airtight container. Enjoy.
Note: For success, start timing when the mixture reaches a full rolling boil. If you boil too long the cookies will be dry and crumbly. If you don't boil long enough, the cookies won't form properly. Also, make sure that the sugar is completely dissolved before you add the peanut butter and oats.
