I love kabobs for summer grilling. You can make so many different tasty meats this way, shrimp being one of my favorites. This is a wonderful recipe for campfire grilling. Shrimp Kabob Ingredients needed: 1 lb. of large cleaned shrimp, 1 can of pineapple chunks ( or fresh pineapple cut into chunks ), 1 small red onion cut in half, 4 navel oranges. Orange Marinade Dressing Ingredients: 2 Tbs. sesame oil, 3/4 cup of orange juice, 1/2 tsp. ground ginger, 1/4 tsp. pepper, 1 tsp. garlic salt, 1/4 cup of green onions chopped. Preparations as follows: Cut and wedge oranges into 8 sections each. Set half of the orange sections aside. Mix together Orange Marinade Dressing ingredients; setting aside half for dressing. In shallow glass or plastic dish place shrimp and remaining marinade. Cover and refrigerate for 15 minutes allowing to marinate well. In the mean time heat up grill. Cut onion halves into wedges and separate into pieces. Remove shrimp from marinade. Thread shrimp, onion pieces, orange wedges, and pineapple chunks onto metal kabob skewers, allowing a small space between each piece. Grill kabobs over heat 6-8 minutes, while turning and brushing with remaining marinade. Shrimp should be pink and firm when done. Enjoy.
