Shrimp is a must have for summer parties. This recipe is quick and simple, for the "host with the most." Ingredients needed: 1 lb. of cleaned shrimp, 1 egg slightly beaten, 1/4 cup of flour, 1 tsp. pepper, 1 tsp. salt, 1 cup of shredded coconut ( my favorite being BAKER'S ANGEL FLAKE Coconut ), vegetable oil for frying. Preparations as follows: Mix together flour, salt, pepper, and coconut. Dip shrimp in egg; roll into coconut mixture. Heat oil in large skillet on medium heat until hot ( I only own Iron skillets ). Place shrimp into heated oil, cooking 3-4 minutes on each side, or until golden brown. Drain excess oil onto paper towels. Serve with sauce, or lemon and pineapple wedges. Enjoy
