Puttin' on the Ritz Sweet Potato Casserole
This recipe given to me by my wonderful sister Pam is absolutely delicious. You'll seldom need dessert when serving these with a meal. Preheat oven to 350 degrees Grease a large baking dish. Ingredients needed for casserole: 3 cups of mashed up sweet potatoes ( sweet potatoes fresh from garden precooked and mashed up, or canned sweet potatoes purchased from store, and drained before mashing up, either works fine ), 1/2 cup of brown sugar, 1/2 cup of white sugar, 2 eggs beaten, 1 tsp. vanilla, 1/4 cup melted butter, 1/2 cup milk Ingredients needed for topping: 2 cups of crushed Ritz crackers, 1/4 cup of melted butter, 1/2 cup of brown sugar, 1 cup of chopped walnuts. Preparations as follows: Mix casserole ingredients together well and place into casserole dish. Mix together topping ingredients and spread over sweet potato mixture. Bake at 350 30-35 minutes or until browned. Enjoy!
