Meatloaf is such a great time saving dish to serve up that goes well with just about any side of vegetables. Meatloaf Ingredients needed: 1 lb ground beef, 8 ounces canned or fresh diced tomatoes (without juice), 1/2 cup quick-cooking oats, 1/2 cup chopped onion, 1/2 cup chopped bell pepper or banana peppers, 1 egg, lightly beaten, 1 1/4 teaspoon salt, 1/4 teaspoon ground black pepper, Topping Ingredients: 2 tablespoons brown sugar, 1 tablespoon prepared mustard, 1/3 cup ketchup. Preparations as follows: Preheat oven to 375 degrees. Mix together meatloaf ingredients. Shape into a loaf pan. Mix together topping ingredients and spread over meatloaf mixture. Bake for 1 hour at 375 degrees. Enjoy.
