These apple cheddar muffins are delicious to serve up with breakfast or as an after dinner snack. Ingredients needed: 2 cups of all-purpose flour, 1/3 cup of sugar, 1 Tbs. of baking powder. 1/2 tsp. of salt, 1/4 tsp. of ground nutmeg, 2 large eggs, 3/4 cup of milk, 1/4 cup of melted butter or margarine, 1 cup of grated, cored, peeled baking apples, 3/4 cup ( 3 oz. ) of shredded cheese. Preparations are as follows: Preheat the oven to 400 degrees. Spray 12 regular-size muffin cups with nonstick cooking spray. In a large bowl, sift together the flour, sugar, baking powder, salt, and nutmeg. In a small bowl, whisk the eggs, with the milk and butter until blended. Using a wooden spoon, make a hole in the center of the flour mixture, then pour in the egg mixture all at once. Stir together lightly ( AVOID OVER MIXING ). Fold in the apples and cheese. Spoon the batter into the muffin cups until 3/4 full. Bake at 400 degrees for 20 to 25 minutes or until golden brown. Cool for 5 minutes, then lift out with a spatula. Delicious when served hot with honey. Enjoy.
