Cheddar Melt Potato Skin Appetizers

These cheddar melt potato skin appetizers are  tantalizing to your taste buds and sure to please your appetite. Ingredients needed: 4 medium sized baking potatoes, 4-6 slices of bacon, 2 Tbs. of vegetable oil, 2 cups of shredded cheddar cheese, 1/4 cup of sour cream, 2 Tbs. of finely chopped chives, or green onions, 1 Tbs. of minced jalapeno pepper. Preparations are as follows: Place a piece of foil on the bottom rack of oven. Preheat oven to 425 degrees. Scrub the potatoes well and pierce the skins a few times with a sharp knife. Place the potatoes directly onto the middle oven rack and bake for 1 hour or until tender. Meanwhile in a small skillet, cook the bacon over medium-high heat until crisp. Drain on paper towels, then crumble the bacon into small pieces.  Using a sharp knife, cut the potatoes in half lengthwise. With a small spoon,  scoop out the pulp, leaving 1/4-inch thick shells ( save the potato pulp for another use. ) Cut the skins into appetite-size triangles. Place the skins onto a baking sheet, brush the insides with oil and bake for 15 minutes or until crisp. Remove the skins from the oven, sprinkle with cheese, and return to the oven for an additional 5 minutes, or until the cheese melts. Top the skins with the sour cream, then sprinkle with the chives, pepper, and bacon pieces.  Enjoy.
