These pork kabobs are the perfect menu item for outdoor barbecue fun! Ingredients needed: 1 lb. of pork tenderloin cut into 1 inch cubes, 1 cup of lime juice, 4 tsp. of sugar, 1/2 tsp. of salt, 1 tsp. of ground coriander, 1 clove of minced garlic, 2 Tbs. of softened butter or margarine, 1 Tbs. of minced fresh parsley, 2 tsp. of lime juice, 1/8 tsp. of sugar, 2 ears of corn cut into 8 pieces, 1 large green or red bell pepper cut into 1 inch chunks. Preparations are as follows: Fire up the grill allowing the coals to become hot. Combine 1 cup of lime juice, 4 tsp. of sugar, 1/2 tsp. of salt, coriander, and garlic. Place pork cubes into heavy resealable, plastic freezer bag and pour lime mixture into bag; covering pork. Seal bag, marinate in refrigerator, for at least 30 minutes. While waiting on pork to marinate, blend together butter, parsley, 2 tsp. of lime juice, and 1/8 tsp. of sugar; set aside. Thread pork cubes onto skewers, alternating with pieces of corn and chunks of peppers. Grill over hot coals, basting with butter mixture, for 10 to 15 minutes, turning frequently. Enjoy.
