Cheesy Potato Casserole

This recipe is great for summer, when everyone is short on time and busy with outdoor activities. It goes well with just about any kind of meat, especially grilled fish. Preheat oven to 350 degrees. Grease large casserole dish with butter and set aside. Ingredients needed: 32 oz. of frozen shredded hash browns or home made hash browns shredded, 8 oz. of cheddar cheese ( sharp or mild ), 1 can of cream of chicken soup undiluted ( my favorite being CAMPBELL'S® ), 8 oz. sour cream, 1 stick of melted butter or margarine, 1/2 cup of chopped onions ( optional ), salt and pepper to taste. Preparations as follows: Place ingredients into casserole dish Bake at 350 degrees for 30 minutes or until golden brown. Enjoy!
