This cookie recipe is another all time family favorite. Not only are they delicious but they are a great way to get more fruit into a child's diet. Cookie Ingredients needed: 2 3/4 cups All purpose flour, 1 1/2 cups brown sugar, 1/2 tsp. baking soda, 3/4 cup of apple sauce, 1/2 cup shortening ( Crisco works well ), 2 eggs, 1 tsp. cinnamon, 1/4 tsp. ground cloves, 1 tsp. vanilla. Icing ingredients: 1/3 cup of butter or margarine, 2 cups of confectionery sugar, 1/2 tsp. vanilla, 2-4 Tbs, water ( depending upon consistency ) Preparations for cookies are as follows: Preheat oven to 375 degrees. Grease cookie sheets. Mix Cookie ingredients together well. Drop by rounded spoonfuls ( or ice cream scoop works wonderfully ) onto greased cookie sheets. Bake at 375 for 8-10 minutes. Allow to cool. Preparations for icing as follows: In sauce pan over medium heat place 1/3 cup of butter or margarine, stirring consistently, heat until golden brown. Remove from heat, add 2 cups of confectionery sugar, 1/2 tsp. vanilla, stirring in 2-4 Tbs. of water until desired consistency. Spread onto cookies. Makes approximately 35 cookies / per batch. 5 dozen cookies if recipe is doubled. Enjoy
