These marinated tomatoes with mozzarella are great to serve with grilled chicken sandwiches, or as a zesty Italian appetizer. Ingredients needed: 1 lb. of sliced Italian tomatoes, 1 medium bunch of fresh basil leaves, divided, 1/2 lb. of packed buffalo mozzarella cheese, sliced, 1/4 cup of olive oil, 3 Tbs. of chopped fresh chives, 2 Tbs. of red wine vinegar, 2 Tbs. of sugar, 1/2 tsp. of dried oregano, 1/2 tsp. of Lawry's® Seasoned Pepper, 1/2 tsp. of Lawry's® Garlic Powder with Parsley. Preparations are as follows: Divide basil in half; reserve one half for garnish. Chop remaining basil leaves; set aside. In a shallow dish place tomato slices and cheese. In a small bowl, combine oil, chives, vinegar, sugar, oregano, Seasoned Pepper, and Garlic Powder with Parsley. Pour over tomatoes and cheese. Cover and refrigerate for at least 30 minutes. To serve, arrange tomato and cheese slices on a serving plate. Sprinkle with chopped basil leaves and garnish with reserved whole basil leaves. Enjoy.
