Grilled Butterflied Cornish Game Hens

These Cornish game hens are a delicious addition to any menu. Ingredients needed: 2 Cornish game hens, Olive Oil Cooking Spray, Seasoned Salt, Ground Black Pepper, 1/2 cup of French's® Dijon Mustard. Preparations are as follows: Heat up grill, and charcoals. Remove neck and giblets from hens. Wash hens and pat dry. Place 1 hen breast-side down, onto a cutting board. With kitchen shears or a sharp knife, cut along one side of the backbone, cutting as close to the bone as possible. Do the same with the other side of the backbone; removing the backbone. Spread the bird open and turn breast-side up, pressing to flatten. Repeat with remaining hen. To keep drumsticks flat, make a small slit, through the skin with the point of knife between the thigh and the breast. Push end of leg through the slit. Repeat on other side of bird, and with remaining hen. Coat both sides of hens with cooking spray. Sprinkle with seasoned salt and pepper. Generously brush mustard onto both sides of hens. Place hens, skin-sides up, onto oiled grid. Grill over medium-high coals for 35 to 45 minutes until meat is no longer pink near bone and juices run clear, turning and basting often with remaining mustard. Do not baste during last 10 minutes of cooking. Goes well with just about any side dish. Enjoy.
