Delicious Herb-Crusted Roast Beef & Potatoes

This mouth watering roast beef and potatoes is wonderful for serving to guests and family and a great addition to any meal. Ingredients needed: 1 ( 4 1/2 lb. ) eye of round or sirloin tip beef roast, 3/4 cup plus 2 Tbs. of olive oil ( divided ), salt and pepper to taste, 2 Tbs. of paprika, 2 lbs. of small red skin potatoes ( cut in half ), 1 cup of bread crumbs, 1 tsp. of thyme leaves, 1 tsp. of rosemary leaves, 1/2 tsp. of salt, 1/4 tsp. of black pepper. Preparations are as follows: Preheat oven to 325 degrees. Brush roast with 2 Tbs. of olive oil, season to taste with salt and pepper. Place into a large roasting pan; insert a meat thermometer into center of thickest part of roast. Roast for 45 minutes.  Meanwhile, in a large bowl, combine 1/2 cup of olive oil and paprika. Add potatoes and toss to coat.  In a small bowl combine remaining 1/4 cup of olive oil, bread crumbs, thyme, rosemary, 1/2 tsp. of salt, and 1/4 tsp. of pepper. Remove roast from oven. Place potatoes around roast. Press bread crumb mixture on top of roast to form a crust. Sprinkle any remaining bread crumb mixture over potatoes. Place back into oven and roast for an additional 40 to  45 minutes or until thermometer reads 145 degrees F. for medium-rare or longer if desired. Transfer roast onto a carving board; tent with foil. allow to stand 5 to 10 minutes before carving. Serve with potatoes and garnish as desired. Enjoy.
