Good Old Fashioned Homemade Country Bread

Preparing homemade bread brings back many fond memories of times spent in an aromatic kitchen, with my dear grandmother, as we made bread for family gatherings. This bread is  wonderful served by itself  or with some fresh jam or jelly. Ingredients needed: 2 packages of active dry yeast, 2 cups of warm water, 1/2 cup of sugar, 1 Tbs. of salt, 2 eggs beaten, 1/4 cup of canola oil, 7 cups of all-purpose flour. Preparations are as follows: In a large bowl, dissolve the yeast in the warm water. Add sugar, salt, eggs, oil, and 3 cups of the flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6 to 8 minutes. Place into a greased bowl, turning once to grease the top. Cover and allow to rise in a warm place until doubled in size, approximately 1 hour. After it has risen punch the dough down. Divide in half and shape into two loaves. Place each loaf into a greased 9-inch x 5-inch loaf pan. Cover and allow to rise again until doubled, approximately 1 hour. After it has risen for the second time preheat the oven to 375 degrees. Bake the loaves at 375 degrees for 23 to 30 minutes or until golden brown. Remove from oven and allow loaves to cool. Enjoy.
