Oven-Crisped Chicken Breast

This no fuss no fail crispy chicken breast is delicious to serve up when pressed for time, but wanting to impress. Ingredients needed: 8 boneless skinless chicken breast halves, 2 egg whites, 1/2 cup of milk, 1/2 cup of all-purpose flour, 1 Tbs. of paprika, 1 tsp. of dried basil leaves, 1/2 tsp. of salt, 1/4 tsp. of pepper, 1 cup of plain dry bread crumbs, 1/4 cup of oil. Preparations are as follows: Preheat oven to 425 degrees. Rinse and dry chicken. Beat egg whites in a large shallow dish until frothy. Beat in milk. Combine flour, paprika, basil, salt, and pepper in a large plastic food storage bag. Place bread crumbs into another large plastic food storage bag. Shake breast halves one or two at a time, in flour mixture, then dip into egg white mixture. Shake chicken into crumbs. Pour oil into a shallow baking pan, Place oil into 425 degree oven for 3 to 5 minutes until oil is hot, but not smoking. Add chicken breasts in single layer. Bake at 425 degrees for 10 minutes. Turn chicken over. Sprinkle with any remaining crumb mixture. Bake an additional 10 minutes or until chicken is no longer pink. Enjoy.
