This Southwest Caesar Salad is delicious enough to make even Caesar Cardini of Tijuana, ask for seconds! Ingredients needed for salad: 2 cups of cooked chicken breast meat, cut into cubes, 1 can ( 16 oz. ) of kidney or pinto beans, drained, 1 can of whole kernel corn, drained, 1 medium tomato, cut into wedges, 1 red yellow, or green bell pepper, thinly sliced, 1/2 of a medium sized onion, thinly sliced, 1/2 cup of grated Parmesan cheese, 3/4 cup of croutons, 1 head of Romaine lettuce, hearts and tender leaves only. Ingredients needed for dressing: 2 garlic cloves, salt and pepper to taste, 1 Tbs. of fresh lemon juice, 1/2 Tsp. of Dijon mustard, 1 egg yolk, 1/2 cup of extra-virgin olive oil. Preparations for salad are as follows: Combine romaine lettuce, croutons, and Parmesan cheese with chicken, beans, corn, tomato, bell pepper, and onion, in a large salad bowl. Preparations for dressing are as follows: In a large bowl, mash the garlic, add the lemon juice, mustard, and egg yolk, whisk together until smooth, gradually mix in the olive oil, and salt and pepper to taste. Pour dressing mixture over salad ingredients, and toss evenly to coat. Enjoy.
