Jamaican Style Pork Chops With Tropical Fruit Salsa


These Jamaican pork chops and tropical fruit salsa will add spice and a tropical flair to your next barbecue. Ingredients needed for pork chops: 2/3 cup of Italian salad dressing, 1/3 cup of Frank's® Original Redhot® Cayenne Pepper Sauce, 1/3 cup of lime juice, 2 Tbs. of brown sugar, 2 tsps. of dried thyme leaves, 1 tsp. of ground allspice, 1/2 tsp. of ground nutmeg, 1/2 tsp. of ground cinnamon, 6 loin pork chops, cut 1 inch thick. ( Tropical Fruit Salsa recipe follows ) Preparations for pork chops are as follows: Place salad dressing, Redhot sauce, lime juice, sugar and seasonings into blender or food processor. Cover and process until smooth. Reserve 1/2 cup of dressing mixture for Tropical Fruit Salsa. Place pork chops into a large resealable plastic storage bag. Pour remaining dressing mixture over chops. Seal the bag and marinate in refrigerator for 1 hour. Heat up charcoal grill, once hot, place chops onto barbecue grid, reserving the marinade from the bag. Grill over coals for approximately 30 minutes or until pork is juicy and barely pink in center, turning and basting frequently, with reserved marinade mixture from bag. ( Do not baste during last 5 minutes of cooking. ) Serve chops with Tropical Fruit Salsa. Garnish as desired. Enjoy.                                                                        Tropical Fruit Salsa. This tropical fruit salsa goes well with many barbecue dishes and is quite delicious. Ingredients needed: 1 cup of finely chopped fresh pineapple, 1 ripe mango, peeled, seeded, and finely chopped, 2 Tbs. of red onion finely chopped, 1 Tbs. of minced fresh cilantro leaves. Preparations are as follows: Combine pineapple, mango onion, cilantro, and reserved 1/2 cup of dressing mixture in a small bowl. Refrigerate until chilled. Enjoy.
