This chicken breast recipe is great for those who are pressed for time, but want something delicious to serve for a luncheon or dinner. Ingredients needed: 1 lb. of boneless, skinless, chicken breasts, 2 Tbs. of red wine vinegar, 1 Tbs. of olive oil, 1/3 cup of orange juice, 3 Tbs. of lime juice, 1/2 tsp. of ground cumin, 3 garlic cloves ( minced ), 2 Tbs. of paprika, 1 tsp. of dried oregano. Preparations as follows: Preheat oven to 400 degrees. In a 9x13 inch baking dish, combine, the oregano, paprika, garlic, and cumin. Work in the lime juice, and orange juice, oil, and the vinegar. Place the chicken breasts between sheets of waxed paper, and pound with a mallet until they are approximately 1/2 inch thick. Add the chicken to the baking dish of prepared ingredients, turning to coat well. Bake at 400 degrees, ( basting occasionally), for 20 to 30 minutes. Goes well with just about any side dish. Enjoy.
