This recipe is a quick and delicious recipe for all vegans who might happen upon my blog. Ingredients needed: 1 chopped onion, 1 tsp. of minced garlic, 4 cups of canned vegetable broth, 3 cups of diced, peeled, fresh yams, 1 16-oz bag frozen mixed vegetables ( or fresh veggies when available ), 2 14 3/4-oz. cans of cream style corn, 1 10-oz. can of chopped tomatoes with juice, 1 6-oz. can of tomato paste, 1 Tbs Worcestershire sauce, salt and pepper to taste. Preparations as follows: In large nonstick pot coated with cooking spray, saute onion and garlic until tender, ( approximately 5 minutes ). Add broth, sweet potatoes, vegetables, cream corn, tomatoes, tomato paste, Worcestershire sauce, salt and pepper to taste. Bring to a boil, reduce heat, and simmer until sweet potatoes are tender. Variation for non vegans, add left over chicken and or sea foods. Enjoy
