You are going to love this creamy, delicious broccoli soup made in your crockpot!
Ingredients:
½ stick butter
5 T. flour
3 C. cream
3 C. vegetable broth
½ C. onion, diced
3 C. broccoli florets
3 cloves garlic, minced
1 tsp. oregano
2 oz. cream cheese
2 C. white cheddar cheese, shredded
Salt and pepper to taste
Directions:
In your crockpot, add onion, broccoli, garlic, oregano, and cream cheese. In a saucepan, melt butter and whisk in flour until thick. Cook for a minute and gradually whisk in cream. Heat and continue whisking until sauce thickens. Pour sauce and vegetable broth into crockpot, stir well, cover, and cook on high for 4 hours. At the end of cooking, stir in white cheddar, salt, and pepper to taste. Once melted, serve. Enjoy!
