If you're going stir-crazy for stir-fry then I've got the perfect stir-fry recipe for you. This stir-fry is delicious when served with rice and sure to become a favorite at your house. Ingredients needed: 1 lb. of pork loin or boneless chicken breast, 3/4 cup of orange juice, 1/3 cup of honey, 3 Tbs. of soy sauce, 1 Tbs. of cornstarch, 1/4 tsp. of ground ginger, 2 Tbs. of vegetable oil, divided, 2 large carrots, sliced diagonally, 2 stalks of celery, sliced diagonally, 1/2 cup of peanuts or cashews, hot cooked rice ( I own a Black & Decker® rice cooker as pictured, which helps me make perfect rice every time. ) Preparations for stir-fry are as follows: Cut pork, or chicken into thin strips; set aside. Combine orange juice, honey, soy sauce, cornstarch, and ginger into a small bowl; mix well. Heat 1 TBS. of oil in a large skillet over medium-high heat. Add carrots and celery; stir-fry for approximately 3 minutes. Remove vegetables; set aside. Add remaining 1 Tbs. of oil to skillet. Add meat; stir-fry for approximately 3 minutes. Return vegetables to skillet. Add sauce mixture to skillet with nuts. Cook and stir over medium-high heat until sauce comes to a boil and thickens. Serve over hot rice. Enjoy.
