Chocolate Zucchini Bread


This zucchini bread is sure to become a favorite of your families. The zucchini season being almost upon us, so I thought I'd share it. Ingredients needed: 3 eggs, 1 cup of oil, 2 cups of sugar, 2 cups of shredded zucchini (  squeezed dry of any excess juices ), 2 1/2 cups of all purpose flour, 1/2 cup of Hershey's® cocoa, 1 tsp. of salt, 1 tsp. of baking soda, 1 tsp. of cinnamon ( optional ), 1/4 tsp. of baking powder, 1 Tbs. of vanilla. Preparations as follows: Preheat oven to 350 degrees. Grease 2 loaf pans ( or will make 14 mini loaves ). Beat eggs, oil, sugar and vanilla. Stir in zucchini. Mix together dry ingredients, and add to zucchini mixture. Pour into 2  greased loaf pans. Bake at 350 degrees for 55-60 minutes. Enjoy.
